Supply Chain Management of Fortified Rice Kernels and Fortified Rice Sachin Kumar, Bindu Bala, Sujosh Nandi Rice Fortification Technology Machinery and Quality Assurance, 2026 This chapter focuses on supply chain management practices for fortified rice kernels (FRK) and fortified rice (FR) to improve distribution efficiency, traceability, and nutritional quality. Various critical stages of the supply chain, including raw material procurement, supplier selection, manufacturing integration, storage, and distribution are discussed in detail. Further, emphasis is given on the implications of cutting-edge technologies such as AI, IoT, blockchain, and automation to create a robust supply chain system for FRK and FR by eliminating logistics challenges, following regulatory compliance and establishing coordination between public institutions and private sector players. The role of maintaining appropriate temperature and humidity in the storage system and during transportation is discussed to prevent nutrient degradation. Distribution through various public welfare schemes and private market linkages for scaling up the rice fortification program is also explored in this chapter. Overall, this chapter illustrates the use of robust digital infrastructure, regulatory protocol, and public–private partnerships to achieve a sustainable FR supply chain system to combat micronutrient deficiencies.
Packaging, Storage and Shelf-Life Evaluation of Fortified Rice Kernels and Fortified Rice Sujosh Nandi, Indrajit Dalai, Saurabh Kumar, Hari Niwas Mishra Rice Fortification Technology Machinery and Quality Assurance, 2026 Although manufacturing and supply chain management of fortified rice kernels (FRK) and fortified rice (FR) are major concerns in combating micronutrient malnutrition in India, to date, appropriate packaging and storage conditions of FRK and FR are primarily overlooked. Therefore, this chapter illustrates the interplay between various packaging materials and storage conditions to maintain nutrient stability and overall quality of FRK and FR during long-term storage. Various intrinsic and extrinsic factors like moisture content, light exposure, oxygen and water vapour permeability of packaging materials and temperature and relative humidity of storage conditions can severely affect the nutrient retention during storage of both FRK and FR. Hence, it is recommended to store FRK and FR at a temperature below 25°C and relative humidity below 60%. This chapter also discusses the effect of various polymer materials on controlling moisture vapour and oxygen transfer rate and photodegradation of vitamin B12 and folic acid. Shelf-life estimation procedure of FR and FRK is also explained in this chapter.
