  • Changes related to storage conditions in the quality of quail eggs of different sizes

    This study assesses the impact of storage temperature – ST (4–6 °C and 20–22 °C), storage duration – SD (7, 14, 21, and 28 days), and egg weight group – EWG (A ≤ 10, B = 10.01–11.00, C = 11.01–12.00, D = 12.01–13.00 gram) on the EWL as well as quality attributes of 400 quail eggs. Various parameters were assessed, including egg weight loss (EWL), external quality attributes: egg weight (EW), egg shape index (ESI), eggshell weight (ESW) and eggshell thickness (EST), and internal characteristics: albumen weight (AW), albumen index AI, albumen pH (ApH), Haugh unit (HU), yolk weight (YW), yolk index (YI), yolk pH (YpH), yolk color (YC) and yolk/albumen ratio (Y/A). This comprehensive analysis aimed to provide a thorough understanding of the eggs' physical and internal qualities. The data obtained was analyzed using JMP IN 7, revealing impacts of ST, SD, and EWG on quail eggs quality (P <0.05). The storage temperature parameters not only demonstrated statistically significant differences in AW (P < 0.05) but also in YI, and YpH (P <0.05). Parameters such as AI, YW, ESW, EST, ESI, Y/A, YC, HU, and YpH did not reflect statistically significant differences by ST (P > 0.05). SD had significant impact on AW, AI, ApH, HU, YW, YR, YI, Y/W, YC and YpH (P <0.05). Changes in AW, AI, YW and HU were observed based on EWG (P < 0.05). Furthermore, significant effects (P < 0.05) were found for interactions between ST×SD×EWG on EWL, AW, YW, and Y/A. This research is focused on providing a comprehensive overview of storage conditions, necessary to maintain quality eggs.
  • Influence of the farm location and seasonal fluctuations on the composition and properties of the milk

    The aim of this research was to investigate the variations in the chemical composition as well as the physical and microbiological properties of raw milk depending on the farm location and the season. Seven dairy farms located in seven different geographic regions of Kosovo were included in the experiment. Milk composition (total solids – TS, milk fat – MF, solids nonfat – SNF, protein – P, lactose – L, active acidity – AA (pH), density – D, colony formatting unit – CFU, and somatic cells count – SCC) were analysed during a one-year period from December 2021 to November 2022. In a total of 252 analysed milk samples, the research showed an average good composition in accordance with the Kosovo regulation for milk quality: TS (13.71%), MF (5.12%), SNF (8.60%), P (3.25%), L (3.87%), AA (6.83), D (1.028 g cm-3), but higher number of CFU (194,048 mL-1), and SCC (418,429 mL-1). Farm location showed significant differences (P < 0.01) in TS, MF, SNF, P, D, CFU and SCC, whereas L content and AA value were statistically non-significant. The lower value of TS, MF, and CFU were detected in summer, AA, and P in spring, SNF and L in autumn, D value was similar in all seasons, whereas only SCC was present in winter season. The differences in all analysed parameters with respect to the season were statistically non-significant.
  • The effect of storage conditions and packing materials on the quality properties of chicken eggs

    This study investigated how storing eggs in different packaging (unpackaged eggs-control, cardboard, styrofoam, plastic) and temperatures (4–6, 20–22 °C) for 28 days affects their quality. Eight eggs were analysed on days 0, 7, 14, 21, and 28 for each treatment. Storage temperature–ST, packaging material–PM, storage duration–SD, and their interaction encouraged egg weight loss–EWL (P ˂ 0.05). The interaction of the three factors showed no significant difference in the EWL. Storage temperature significantly influenced (P ˂ 0.05), eggshell thickness–EST, albumen index–AI, albumen pH–ApH, Haugh unit–HU, yolk height–YH, and yolk index– YI. Some parameters like egg weight–EW g, shape index–SI and albumen weight–AW g, changed significantly (P ˂ 0.05) according to storage in different PM. The SI, eggshell weight–ESW g, EST, eggshell index–ESI, albumen ratio–AR, AI, ApH, HU, yolk weight–YW, yolk height–YH, YI, yolk colour–YC, and yolk:albumen–Y:A ratio changed during storage. The ST×SD was significant for EW, ESW g, EST, AW g, albumen ratio–AR, AI, ApH, HU, YW g, YH, and YI (P ˂ 0.05). As a result of the PM×SD interaction, significant differences (P ˂ 0.05) were observed in EW g ESW g, EST, AW g, and YI. A significant interaction effect of ST×PM×SD was found on AI, YH, and yolk pH–YpH (P ˂ 0.05). The purpose of this research is to give an overview of the storage conditions in order to have good quality eggs.
  • Influence of altitude and lactation period on composition and physical properties of milk in crossbred Sharri sheep

    The aim of this study was to compare the changes in chemical composition and physical properties of raw milk from crossbred ‘Sharri’ sheep as a function of altitude (1,200 m - variant A and 1,600 m - variant B) and lactation period. Milk composition (total solids - TS, milk fat–MF, solids non-fat-SNF, protein - P, lactose - L, ash, freezing point - FP, titratable acidity - TA, active acidity - AA, and density - D) were analysed once per month during the period of June, July, August, and September of 2021. Sheep milk at 1,600 m altitude showed significantly higher values (P < 0.05) for all analysed parameters and lower values for FP compared to milk from 1,200 m altitude, except SNF, FP and AA, which were not statistically significant. The analysed milk during the four months of lactation period has significantly increased (P < 0.05) in TS (from 15.65 to 25.46%); MF (6.49 to 10.80%); SNF (9.16 to 14.66%); P (4.46 to 6.94%); L (3.96 to 6.52%); ash (0.74 to 1.20%); TA (9.90 to 14.53 °SH); whereas changes in FP value (-0.611 to -0.709 °C), AA (6.68 to 6.76) and D (1.035 to 1.053 g cm-3 ), have been statistically non-significant. The interactions between altitude*lactation period on milk composition (TS, MF, SNF, P, L, ash) of crossbred ‘Sharri’ sheep and physical properties (FP, TA, AA and D) were nonsignificant.

    Food adulteration and fraudulent practices are widely observed in the food industry worldwide and are of great concern for Balkan countries. This study aims at investigating the level of undeclared pork meat in commercial beef and chicken meat products sold in Kosovo by implying one commercial enzyme-linked immunosorbent assay (ELISA) and two confirmatory real-time polymerase chain reaction (PCR) approaches [ready-to-use real-time PCR and real-time PCR with primers specific for pork mitochondrial deoxyribonucleic acid (DNA)]. In supermarkets in the capital city, Prishtina, 62 meat products were randomly sampled, and the three methods were applied. Additionally, these three approaches were evaluated for their practicability, reproducibility, and cost. The results showed that pork was present in 32% of beef- and 8% chicken-based products. ELISA and real-time PCR with pork specific primers showed 100% of reproducibility for beef- and chicken-based products. In contrast, the ready-to-use real-time PCR kit showed 100% reproducibility in chicken-, but only 75% in beef-based samples. ELISA was more rapid than both real-time PCR approaches, but it was more challenging when large numbers of samples were processed. The real-time PCR approach with pork specific primers was the cheapest, while the ready-to-use real-time PCR was the most practical method. Commercial ELISA, in combination with real-time PCR with pork specific primers, provides a reliable and affordable testing methodology that can be implemented for rapid detection and monitoring of pork adulteration in diverse commercial foods.
  • The European performance indicators of broiler chickens as influenced by stocking density and sex

    The aim of this study was to investigate the influence of different stocking densities on the growth performance of Ross 308 broiler chickens up to six weeks of age. A total of 216 one-day broiler chicks were randomly assigned to three treatment groups based on the stocking density: Low (LSD) = 14 chickens m-2, Medium (MSD) = 18 chickens per m2 and High (HSD) = 22 chickens m-2, with four replications. Higher body weight gain (TWG) was observed for the low (2,043.89 g) and medium (2,008.03 g) compared to the high (1,901.51 g) density. The study revealed that chickens of the LSD treatment consumed significantly (P < 0.01) more feed compared to the HSD chickens. High stocking density (22 m-2) tended to improve feed conversion ratio compared to medium (18 m-2) and low (14 m-2) stocking density, but the differences were not significant (P > 0.05). From the results of this study it can be concluded that broiler chicks can be stocked up to 22 chickens m2, as far as required standards are assured.

    An 8 week experiment was conducted to study the effect of adding phytase (Natuphos 5000 BASF) to low and normal available phosphorus diets of laying hens on the excreta content and excretion of Ca, Mg, Zn and Cu. A total of 144 Hisex Brown laying hens that were 22 weeks old at the start of the experiment were randomly assigned to four dietary treatments. Treatments included three replicates (12 hens each) or 36 hens per treatment in total. Four corn-soybean meal-based diets were formulated to contain two levels of available phosphorus (AP; 0.12 and 0.46%) and two phytase levels (0 and 600 FTU kg 1). The results showed that there was no significant effect of added phytase on excreta Ca and Mg content (P > 0.05), but there was a significant effect of the dietary treatment on the content of Zn (P = 0.0075) and Cu (P = 0.0002). In terms of the excretion of these minerals, the dietary treatment had no effect on Ca and Zn excretion and a borderline effect (P = 0.0522) on Mg excretion measured as the amount of the mineral excreted per egg mass produced is observed. The results however showed a very strong effect of all three factors (available phosphorus, phytase and their interaction) on Cu excretion. The results indicate that adding 600 FTU to the corn-soybean meal laying hen diet with 0.12% or 0.46% AP beneficially affects the content and the excretion of Ca, Mg, Zn and Cu.
